Here’s a quick and easy breakfast that’s also hot and delicious. In addition, it’s a great way to deal with leftover rice.
I like to think of this recipe as an alternative to oatmeal or cream of wheat. And I have been known to have it for lunch, as well as for breakfast. Keep the butter, milk and sugar within reason and its pretty OK on the health-o-meter! (smile)
This one is all about personal preference. Use as much – or as little – of each ingredient as you choose.
Ingredients:
1-2 cups leftover rice
butter (or margarine)
milk or half-and-half
sugar – white or brown
cinnamon (optional)
Getting it Done:
Heat butter in pan until melted.
Add milk or half-and-half and heat.
Add sugar – and cinnamon, if using – stir to blend.
Add rice, stirring to break up any clumps.
Bring to low boil, then simmer for a few minutes.
For thicker consistency, allow to simmer a bit longer until rice absorbs more moisture.
Dress with small pat of butter, drizzle of milk and sprinkle of sugar or cinnamon. Serve immediately.
