For me, French Toast conjures up memories of cold winter mornings with frost on the windows and snow on the ground. I think of snow boots and mittens, of trudging to school through the snow drifts and dreaming of the snow fort I would build that afternoon if only the sun didn’t melt everything too quickly.
Now Dad made Sunday breakfast, usually with pancakes, but sometimes with French Toast or waffles, both of which were real treats for my sisters and me. But on especially cold school days, mom would make French Toast, too. I think it was a bribe, really. (If you’ll stop pretending you’re too sick to go, I’ll make French Toast.)
There are certainly more complex recipes; In fact, I’ll be posting some here soon. But today I want to show you the most basic, easy way to make this morning staple. Let’s go have some fun!
3 eggs
1/2 cup half and half or milk
6 to 8 slices of white bread
Butter
Syrup
Instructions:
Crack eggs into a large bowl. Whisk thoroughly. Don’t be a wimp! My mom couldn’t hit 100 pounds on a scale if she held two cinder blocks, and she can beat the bejeebers out of a bowl of eggs.
Add half and half or milk (mom used milk) and whisk to combine.
Heat a frying pan over medium heat.
Dip bread slices in egg mixture. Carefully flip bread over and coat the other side.
Drop a small pat of butter into pan, then place slices in pan.
Cook for about 3 minutes, then flip to brown other side.
Serve immediately with butter and syrup.
Mom always used plain white bread. Feel free to use other types, but white bread was the standard in our house.
White bread is pretty soft, so you’ll need to be careful handling your coated slices of bread. Once you get them into the pan, everything will be fine.
An electric griddle is great for French Toast because you can cook up to six slices at a time. This is how mom did it, but you can use a frying pan or skillet if that’s what you have. It’s what I have, and I get along OK.
