Mexican Scrambled Eggs

Mexican EggsI love scrambled eggs. I especially love them late at night. When I’m up late working, I often find myself wanting a fourth meal. Instead of loading up on junk food, I’ll try to find something healthier to make. And since I always have eggs on hand, this one is a no-brainer. Of course, you are welcome to enjoy these eggs any time you like — breakfast, brunch, lunch, dinner or – like me – as a late night snack.

Ingredients:

Eggs: 2-3 per person
Half and Half – about 1 Tablespoon per egg
Salt
Garlic powder
Salsa verde – preferably the chunky variety
Olive oil

Instructions:

Crack eggs into large bowl.

Add half and half, a pinch of salt and 1/4 teaspoon garlic powder for every 3 eggs.

Using a whisk, break the egg yolks, then beat the eggs like they owe you money. I mean, beat them a LOT! The idea is to have the eggs blended as much as possible and as light as possible.

Add salsa verde – approximately 1/4-1/2 cup for every three eggs. This is something you’ll have to learn – how much salsa you prefer in this recipe. When in doubt, start on the lighter side, then adjust to taste over time as you prepare these more often.

Heat frying pan to medium, then add 1 or 2 Tablespoons of oil. Let it heat until it shimmers, then swirl it around the pan.

Add egg mixture. Immediately begin to stir the eggs and lift them off the bottom of the pan. I find it best to use a spatula for this.

Remove eggs from pan with a slotted spoon once they have reached the consistency you prefer – creamy to well done. You will notice that, even with well done eggs, there will be some “water” in the pan. That’s from the salsa, so pay it no attention. That water is the reason you’re using a slotted spoon to remove the eggs from the pan.

Serve immediately with warm tortillas.

You can see that this recipe is not any harder to prepare than regular scrambled eggs, but they’re a whole lot more fun! Try this one out and then leave a comment to tell me how it went. And don’t forget to…
