Scrambled Eggs with Dill

Scrambled Eggs with DillOK, I’m going to show you just how much of a geek I am. I got this idea from the movie Star Trek: Generations. Soon after Picard meets Kirk in the Nexus, Kirk prepares some scrambled eggs and asks Picard to hand him the dill. I think it was actually that same night that I first experimented with the recipe. It’s quick and easy, and it’s yet another way to spice up your eggs.

While it’s always great to cook with fresh herbs, I don’t normally have fresh dill in the kitchen. Fear not! Dried dill will work just fine. Feel free to adjust the amount of seasonings to tailor this recipe to your taste.

Ingredients:

3 eggs per serving
half and half
salt
pepper
dill – dried or fresh
butter (preferably unsalted)

Instructions:

Crack eggs into a large bowl.

Add half and half – approximately 1 Tablespoon (or a bit less) for each egg.

Add a healthy pinch of salt and pepper to taste.

Add dill. If using dried dill, add 1/2 teaspoon per serving. If using fresh herbs, chop them finely and add 1-1/2 teaspoons per serving.

Now beat the eggs with a whisk until foamy and thoroughly blended. (Beat them like they owe you money! – as my friend would say.)

Heat pan to medium, then add a Tablespoon or two of butter, depending on how many eggs you’re preparing. Alternatively, you can use olive oil for a slightly different taste.

When the butter starts to sizzle, give the eggs a quick “fluff” with your whisk and pour into the pan. Let them go for about 20 seconds, then use a spatula to push the eggs toward the center of the pan. As you continue to do this, you can lift the pan and tilt/rotate it so that uncooked eggs flow off the top and onto the surface of the pan.

Once most of the eggs have set, flip them with your spatula so that the “top” of the eggs are now on the bottom. Continue to cook until you achieve your desired consistency – creamy to well done.

Serve immediately to plates. Top with a light sprinkle of dried herbs, or if using fresh dill, place a small sprig on top of eggs.

This recipe takes no longer to make than regular scrambled eggs. And they taste wonderful!
