Brownie Waffles

Brownie WafflesWaffles have been a huge favorite of mine since early childhood. for most of my life, Dad would cook breakfast (at least when he wasn’t in Viet Nam) on Sunday morning. Most of the time he’d make pancakes or French toast. But about once a month he’d make waffles. And, boy, did I pack them in.

SIDE NOTE: My favorite scene in the movie Shrek is when Donkey excitedly announces, “And in the mornin’, I’m makin’ waffles!” Moving on…

You’ve probably already figured out that I also love chocolate. I swear, if they came out with a box of chocolate covered pine cones, I’d probably try them. So when I came across the idea of a chocolate – or brownie – waffle, I pinched myself to make certain I hadn’t died and gone to heaven.

I know some of you are going to be a bit shy about this one. It is baking after all. But set your concerns aside, my Manly Friends; I know that, if you just follow the instructions, you’ll do just fine. And consider the reward!! So let’s get started and have some fun!

Brownie WafflesIngredients:

1 cup flour
2 teaspoon baking powder
1/3 cup cocoa
1/2 teaspoon salt
1/2 cup dark chocolate chips
1 cup milk (divided into half cups)
1/4 cup vegetable oil
1 teaspoon vanilla extract
2 eggs
1/4 cup sugar
1/2 to 1 teaspoon cinnamon (optional)

Instructions:

Preheat waffle iron.

Add flour, baking powder, cocoa, salt and (if using) cinnamon to large mixing bowl. Stir thoroughly to combine. This is important. Don’t ask me why it matters, I just know it does. So stir it all up really well and let everything get to know everything else.

Brownie WafflesIn small microwave-safe bowl, add chocolate chips and 1/2 cup milk. Microwave on high for 30 seconds. Stir, then repeat until all chips are melted and well blended into the milk.

Add remaining milk, vegetable oil, vanilla and two egg yolks (only the yolks!). Save the egg whites for the next step. Stir well to combine so everything is happy.

Add egg whites to medium bowl. Add sugar to bowl. Whip with hand mixer until soft peaks form – about 4-5 minutes.

Add chocolate milk mixture to dry ingredients and stir until just combined. Don’t overdo it; just make sure everything is blended.

Gently – and I do mean gently – fold in the egg whites until just blended. Again, don’t overdo it.

Spray waffle iron with cooking spray (plain is best), and cook batter following the instructions that came with your waffle iron. If unsure, please Read The Friendly Manual that came with your appliance.

Serve immediately.

Brownie WafflesNotes:

Years ago I discovered the secret to Mexican chocolate: a hint of cinnamon. And I’ve been using that trick a lot in various recipes. If you’ve never added cinnamon to a chocolate recipe, try it now!

Obviously, these would be awesome with vanilla ice cream, some chocolate sauce and perhaps some nuts. Another great idea is to top with strawberries and whipped cream. Still another is to mimic a Black Forest cake by adding cherries and whipped cream. But no matter what you top them with, they’re a little taste of heaven on your plate!
