Easy Pumpkin Cake

Manly Kitchen Easy Pumpkin CakeI know tons of people who are intimidated by baking. And while it’s true that baking from scratch takes practice, there are literally hundreds of mix-based recipes you can do with little or no experience. This is one of them.

Now that Fall has fallen, as my dad used to say, I’ve been going through my harvest recipes. I found this one tucked away in an old cookbook, but I’ve seen it on numerous recipe sites since. It’s one of the first things I attempted to bake that wasn’t chocolate.

I love pumpkin pie. Cover the entire slice with whipped cream and leave me alone! But after 8 or 10 pies, even I start to want something a little different. This recipe is different enough to make me happy, but still says FALL! just as loudly.

So… now that you know why I’m posting this one, let’s get to it, shall we?

For the Cake:
1 Yellow Cake Mix
1 15 ounce can of pumpkin puree

For the Glaze:
1-1/2 cups powdered sugar
3 Tablespoons apple cider
3/4 teaspoon pumpkin pie spice

Instructions:

Preheat oven to 350°.

In a large bowl, combine cake mix and pumpkin puree. Beat until well incorporated. A mixer is best, but you can use a whisk if you’re truly Manly. The batter will be very thick.

Pour batter into greased 7×11 pan. Bake at 350° for 25-28 minutes or until a toothpick inserted in the center comes out clean.

Let cake cool on a wire rack for 10 minutes. Run a knife around the edges if need be, and turn cake onto serving platter.

In a medium bowl, combine powdered sugar, pumpkin pie spice and apple cider. The glaze should be thick but still pourable. If necesary, you can add more sugar or cider to achieve the desired consistency.

Pour glaze over the cake while still warm.

Reserve some to pour over each slice when served, or you can make another batch just before serving.
