Chicken a la Greek

Chicken a la GreekI learned this recipe almost twenty years ago from a professional chef. Since then, I’ve adapted it to my own taste. It’s a great dinner for company, because it looks complicated, but it’s actually very easy to prepare.

As I mention in the video, you should feel free to adjust this recipe to your own taste, by using vegetables that you like best, leaving out the ones you don’t like.

Ingredients:

Olive oil
Onions -finely diced
2 chicken breasts (cut into bite sized pieces)
Cherry tomatoes
Peperoncini peppers
Olives – green or black
Baby red bell peppers
Roasted garlic
1 Tablespoon oregano
Lemon juice

Instructions:

Heat skillet to medium.

Heat olive oil until it shimmers.

Add diced onions and saute for about three minutes, or until they begin to soften.

Add chicken and brown on all sides.

When chicken is almost done, add cherry tomatoes.

When tomatoes are heated through, add peppers, olives and roasted garlic.

Season to taste with salt and pepper.

Add 1 Tablespoon oregano.

Add juice of one large (or two small) lemons.

Serve immediately.

Note: If you aren’t using roasted garlic, substitute several cloves of garlic, adding them when you saute the onions. Or feel free to use crushed or minced garlic, again adding with the onions.

The day I shot this video, I served this dish with Cheater Rice Pilaf and green beans with a little lemon juice. And it was delicious!
