Easy Beef Stroganoff

Easy Beef StroganoffI taped this segment while staying with my friend Roger and his family. Their oldest daughter, Giovanna, helped me prepare the dish while she learned something new.

I love Beef Stroganoff because it includes two of my favorite things – beef and mushrooms – and it’s served with another favorite – noodles. In fact, I love it so much that I sometimes create the dish without beef, folding it into noodles to serve with a steak. In a sense, that’s just a fancy way of preparing the dish.

Ingredients:

olive oil
garlic
onions (coarse chopped)
flour
beef (cut into cubes)
water
stock concentrate
salt (to taste – optional)
mushrooms
sour cream

Instructions:

Heat olive oil in pan.

Add garlic and saute for two minutes.

Add onions and saute until they are semitransparent. Remove from pan and set aside.

Coat beef cubes in flour and saute until outside is brown. Do not cook until completely done as this will make the meat tougher and less flavorful.

Add small amount of water to begin creating “gravy.”

Add stock concentrate and blend. If desired, you can use beef broth instead of water and concentrate.

Return onions to pan. Add enough water to cover meat and onions. Simmer for 15 minutes or more.

Taste test gravy and add salt if desired. Be careful to not add too much. Better to add too little, because you can then add a bit more if needed. But once the salt is in there, you can’t get it back out.

Add mushrooms and fold carefully into stew. Simmer for five minutes.

Add sour cream and blend.

Serve immediately over noodles.

About the Meat:

For this segment I used large cubes of stew meat. Again my choice was due to the fact that it was on sale and saved me over $6.00. You can use almost any beef, though. If using a roast or steak, cube the meat into the size that you prefer.

As I mentioned in the video, this is a very basic recipe, which makes it great for beginners. Once you’re comfortable with this recipe, you can try your hand at more complex versions. But even then, this is a great recipe for nights when you don’t have enough time to do a more complex version.
