One of the earliest ways I began to learn how to cook was by working with leftovers to make myself snacks and weekend lunches. Most of the time my mom was more than happy for me to use up small portions of this and that. It was a lot better than throwing stuff out. So by the time I went out on my own, I had lots of ways to use up what was in the fridge at any given moment. In addition, I learned that it was OK to experiment. The worst thing that could happen was that I’d try something, and it wouldn’t turn out as well as I’d hoped. No problem; I could always make a PB&J sandwich! And as long as I cleaned up after myself, Mom didn’t mind.
For this recipe, I used all the leftover chicken from Italian Chicken Sandwiches. That’s why you don’t see anything about spices in the instructions below. However, if you want to make this recipe as a “first meal” you can spice it with garlic, basil and Italian seasoning.
Ingredients
olive oil
tomato sauce (one large can)
petite diced tomatoes (two large cans)
tomato paste (two small cans)
leftover Italian chicken
Instructions:
Coat slow cooker with olive oil. This helps with clean-up and also adds an extra layer of flavor.
Add all tomato products and stir thoroughly. This is important, especially to incorporate the tomato paste.
Add leftover chicken and stir thoroughly to mix.
Heat on HIGH for about an hour, then reduce to warm for the rest of the day.
Serve over spaghetti or other noodles of your choice. Dust the top with a bit of Parmesan cheese if desired.
It doesn’t get much easier than this, now does it? Add a salad and some garlic bread, and you have a great meal with very little effort.
