Shrimp and Tomato Salad

Shrimp and Tomato SaladThere are times when you don’t want a big meal, especially during the warmer months. Sometimes, it’s so hot you just don’t want to cook, and you don’t want to fill yourself to the brim. This is a great recipe for those times, as well as for people who eat light as a matter of course.

Another reason I love this recipe is that it includes so many of my favorite foods: shrimp, tomatoes, cucumbers and onions. While there are almost a dozen ingredients, it’s really not that hard to make. Let me show you…

To serve two:

Ingredients:

1/2 pound of shrimp – peeled, deveined and cooked
tomatoes – 2 large, or 4 plum, or equivalent in cherry/grape tomatoes
1 English cucumber, or 1 large cucumber (seeded)
1 small red onion
2 Tablespoons olive oil
2 Tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper (coarse ground works best)
1/4 cup fresh mint (loosely packed – don’t cram it in)
1/4 cup fresh parsley (again, loosely packed)
Crumbled cheese – Blue Cheese or Feta

Instructions:

In a large bowl, whisk together the olive oil, vinegar, salt and pepper. Whip the mixture until it is thoroughly blended.

Remove stems from mint and thinly slice leaves.  Remove stems from parsley and chop. Add to bowl and whisk to blend.

If using large tomatoes, chop into bite-sized pieces. Add to bowl.

Peel cucumber and slice lengthwise into 4 spears, then cut crosswise. If using regular cucumbers, de-seed them before cutting crosswise. Add to bowl.

About the only thing else you need for this meal (and it’s optional) is a nice loaf of French or Italian bread.

Peel and devein cooked shrimp (or get the frozen shrimp that are ready to use.) Add to bowl.

Peel onion, cut in half, then thinly slice. Add to bowl.

Stir all ingredients to coat.

You can serve immediately or chill in the refrigerator for a while for an even cooler meal.

When you serve in individual bowls or on salad plates, sprinkle with crumbled cheese. I prefer Blue Cheese, but you may want to try it with Feta.
