There are days when I’m so overwhelmed with work that I have almost no time to think about cooking. I know you have them, too, don’t you? You know… you get home two hours behind schedule, and you have five hours of stuff to get done in three. The last thing you want to do is spend an hour – or even a half hour – preparing dinner. And, yes, you could have picked up something on the way home, but you forgot. Or your sick of the joint up the street from you. And you had pizza for lunch, so that’s out.
Fear not, Food Lover! I have recipes for nights like those. And this is one of them. There are three ingredients in this, and two of them only require opening a bottle or jar. Easy, Peasy! Let’s get started.
Serves 1
Ingredients:
Olive oil
Chicken Breast
Thick & Chunky Salsa Verde
Instructions:
Cut chicken into bite-sized (or smaller) pieces.
Heat skillet large enough to easily accommodate the amount of chicken you’ll be sauteing. When pan is heated, add about 1 tablespoon of olive oil. Heat oil until it shimmers, then swirl to coat bottom and lower sides of pan.
Add chicken and saute, turning occasionally, until browned on all sides.
Add salsa verde. Heat for 2-3 minutes.
Serve!
See how easy that was? You can get this done in about ten minutes. If you clean as you go, you’ll need less than that to clean up after you eat. Not only have you eaten, you’ve given yourself a relaxing break, and you’ve had a much better meal than junk food. Now that you’re refreshed, you can tackle that work with a better frame of mind.
