Red Potatoes with Garlic and OnionWelcome back to Manly Kitchen, y’all. Today, I’m going to show you how to make a great side dish in no time flat. It’s an excellent addition to almost any mea, and takes very little effort. I actually did this dish the same night that I made the Meatloaf with Horseradish, and it complimented the meatloaf very well.

Ingredients:

Red Potatoes
Garlic – fresh preferred, but you can use powder
Chopped onion
Butter

Getting it Done:

Obviously, you’ll want to cut up enough potatoes to feed everyone. I normally figure about 1-1/2 to 2 cups per person – because I like to make sure there’s enough for even the hungriest people. Let’s use FOUR CUPS for this explanation.

Do NOT peel the potatoes. Cut them into bite size pieces (or smaller, if you prefer).

Spray the inside of a large piece of aluminum foil with cooking spray.

Place potatoes in the center of one half of the foil.

Chop one small onion into a small dice and place on top of potatoes.

Add one to two rounded teaspoons of garlic on top of the onion.

Slice a stick of butter lengthwise into four pieces. Place two of these on top of the pile.

Sprinkle sea salt and cracked pepper (to taste) on top.

Fold up sides of foil and fold the second half over the top.

Bake are 350 (or higher if necessary for the entree) for at least thirty minutes. (They’ll have to bake longer if you’re doing a larger batch.)

Uncover the potatoes by folding back the top flap and turn oven to High Broil setting. Broil for another five minutes.

Remove from oven and empty foil into a bowl. Carefully fold the potatoes to ensure all of them are nicely coated with butter and are mixed well with the onion and garlic.

That’s all there is to it! What’s great about this side dish is that it’s easy to prepare and requires very little attention while cooking. This allows you to concentrate on other parts of your meal.
