Some days are more fun than others. For instance, last night, I got this wild idea to try a new cornbread recipe.
A friend was coming over to watch a movie and I wanted to do something fun for munchies. Scrounging around in the cupboard, I came across a box of cornbread mix sitting next to some cans of peppers. My mind began to run through possibilities, and the next thing you know, I’m taping a new recipe. The fact that you’re reading this is proof that my experiment worked.
Keep in mind that, at its heart, this recipe is all about the box. Because this was the fat-free version, all the original recipe calls for is water. Beyond that, it’s all me. (smile)
Ingredients:
1 box Krusteaz Fat-Free Cornbread mix
1 cup water
1 can (4 oz.) diced jalapenos
1 can (7 oz.) chopped green chiles
1 can (8 oz.) salsa verde
1 can (15 oz.) corn
2-4 tablespoons honey
cornmeal (optional)
Instructions:
Pre-heat oven to 450°.
Grease a 9-13 baking dish and set aside.
Empty cornbread mix into large bowl.
Add water and whisk to combine.
Add jalapenos, chiles, salsa verde and corn, one at a time, whisking to combine after every addition.
Add honey and whisk to blend.
Sprinkle a little cornmeal on bottom of greased pan. Pour batter into pan.
Bake at 450° for 18-22 minutes. To check to see if it’s done, insert clean knife into middle of bread. If it comes out clean, it’s done.
Sprinkle a little cornmeal over the top just for looks.
Serve immediately with butter.
See how easy this is? Even with the extra ingredients, all you’re doing is opening a box and some cans and mixing everything together. And just so you know, my friend LOVED IT! In fact, it was so good and so filling, that we decided you could serve this is a meatless entree, along with a salad. Keep that in mind, OK?
Try this one out, and perhaps experiment with variations. It goes great with chili or any other Mexican or TexMex meal. Until next time,
