Blue Cheese Aioli

Blue Cheese AioliBlue or Bleu. I don’t care how you spell it, I absolutely love blue cheese. I learned many years ago that it’s not just for salad dressings. There are many ways you can enjoy this fragrant, flavorful cheese.

Aioli is a garlic-flavored mayonnaise, created Provence, France, to accompany fish and seafood, and sometimes vegetables. It’s also great with many sandwiches. But add some blue cheese to it and you’ll take aioli to a whole new level!

I’m posting this recipe because it goes very well with Easy Buffalo Chicken Sandwiches, but feel free to try it with other sandwiches, including roast beef and fancy hamburgers.

Ingredients:

1/2 cup crumbled blue cheese
1/3 cup mayonnaise
1 teaspoon fresh thyme leaves (or rounded 1/4 teaspoon dried)
1-2 cloves garlic

Instructions:

Chop fresh thyme leaves.

Finely mince garlic.

Add all ingredients to small bowl. Stir thoroughly to combine.

Let aioli sit while preparing the rest of your meal, so that everything gets to know each other and get happy.

Serve with Easy Buffalo Chicken Sandwiches or other entrees to your taste. It’s also a great dip (chilled) for raw veggies, such as carrots, celery, tomatoes, etc.
