Salads are great for you. I do my best to several every week. One a day would be excellent, although I’m not quite there yet. I know a lot of people who say they love salads, but never have the time to make them. This one is easy enough that you can make a salad for a few people in no time at all, and can put together a HUGE batch to dole out during the week in less than thirty minutes.
One of the reasons I came up with this is that I hate lettuce. Not all lettuce, just the lousy iceberg stuff that looks horrible, has no nutrition and goes limp and a harsh word. Good Lord, what an UnManly Food! Show some spine! Stand up for yourself once in a while! Like spinach!!
Anyway, I hate iceberg lettuce, and I was bored one day and really wanted some fresh veggies with dinner. And, lo! The No-Lettuce Salad was born.
Salad vegetables, such as:
tomatoes
carrots
cucumbers
radishes
celery
onion
broccoli (florets)
cauliflower (florets)
chick peas
corn
and anything else you might put on a salad
Salad dressing of your choice
Optional:
Chopped walnuts
Craisins
Crumbled Blue Cheese
Croutons
Instructions:
Chop all your veggies and put them in a bowl. I like to do them all the same size. I get grape tomatoes and size most other veggies to match.
Drizzle lightly with your choice of dressing. My favorite is a good vinaigrette, with balsamic or raspberry being my main go-to dressings for this one.
Place bowl in refrigerator and toss every so often to continue marinating everything evenly. This is an important step. You want all the veggies to hang out together and get to know each other, and get to know the dressing. This way, everybody’s happy!
Just before serving, add your options and toss to coat.
If you plan to save some for future meals, I suggest you do NOT put the dressing on the entire batch. Take out what you’ll use for dinner and dress that much only. Put the rest of it in the fridge “dry.”
The reason I suggest a very light drizzle of dressing is that, when marinating this recipe, a little really does go a long way. It really doesn’t take much to give every bite of every veggie a taste of your dressing. And, because you’re using so little dressing, this recipe qualifies as Super-Healthy!
