Sure, you know how to make a cheesesteak sandwich. You might even know how to do a fancy version. Cool on you. But it’s always nice to have some variations in your bag of tricks so that you’re not serving the same thing to guests time and time again. What follows is a recipe for a home-made “hot pocket” sandwich, except it’s worth eating. (smile)
Serves 4
Ingredients:
1 sheet of puff pastry
1 to 1-1/2 lbs. thinly sliced roast beef
4 slices of cheese of your choice (I prefer provolone)
Onion
2 Tablespoons butter
Mayonnaise or horseradish sauce
Salt and pepper to taste
Instructions:
Thaw pastry puff.
While pastry is thawing, cut onion in half, then slice very thinly.
Heat pan, then add butter. As soon as it sizzles, add onions and cook until limp and starting to brown.
Unfold pastry on lightly floured work surface.
Cut pastry into 4 squares. Roll squares out to make them a little larger and to form rectangles.
Brush pastries with either mayo or horseradish sauce, leaving room at the edges.
Place roast beef on one side of pastries, again leaving room at the edges.
Sprinkle with salt and pepper to taste.
Place onions on top of beef, then top with a slice of cheese trimmed to fit.
Fold pastry over the fillings and pinch the edges firmly to secure.
Place pastries on cookie sheet lined with parchment paper and bake at 400° for twenty minutes or until nicely browned.
Serve immediately. For a French Dip take, serve with prepared au jus.
