Whenever I have tomato soup, I’m reminded of the best things about my childhood. We all loved a hot bowl of soup with grilled cheese sandwiches. To me, it’s one of those true Comfort Food meals.
Now that I’m older, I still love an easy lunch of canned soup, with or without the sandwiches. But there are times when I want something a bit more “grown-up,” a bit more refined – especially if I’m feeding others. And that’s where this fairly easy recipe comes in. It only takes a few minutes, yet takes tomato soup to a whole new level of goodness.
Ingredients:
1 large can of whole tomatoes
2 jars of roasted red peppers
2-3 cloves garlic
1 heaping spoon of brown sugar
Salt and pepper to taste
Instructions:
Drain tomatoes and peppers. Place in blender.
Add garlic and brown sugar.
Puree until smooth.
Heat on stove until almost boiling.
Season with salt and pepper to taste. (I normally add just a very small pinch of salt, and no pepper.)
Serve immediately with grilled cheese sandwiches or a good loaf of bread and a nice salad.
Next time you’re in the mood to relive your childhood, leave the can of soup in the pantry and try this one out. You’ll be amazed at how good it is. And don’t forget,
