Regular visitors know I love noodles – all kinds of noodles. And you may have already seen my recipe for Shrimp with Lemon Garlic Cream Sauce, which is served over pasta. This recipe is a bit different, but the results are fantastic! It’s great as a main course for a lighter meal (serve with a salad and good bread), or as a accompaniment to Shrimp Scampi. So, without further ado, let’s have some fun!
Serves 4
Ingredients:
8 oz. Angel Hair or other pasta
1/2 cup chicken stock
1/3 cup white wine
2 Tablespoons lemon juice
1 Tablespoon butter (unsalted, please)
1 clove garlic, crushed (or minced)
2 Tablespoons grated Parmesan cheese
Salt and pepper
Basil – fresh or dried
Instructions:
Cook pasta according to package directions and drain well.
Return pasta to pot and add stock, wine, lemon juice, and garlic.
Cook over medium heat for about five minutes, until excess liquid has been absorbed by pasta.
Season with salt and pepper to taste.
Serve immediately, then sprinkle with grated cheese and basil.
Note: I normally don’t use white wine unless I have to. But in this recipe, I have to, because it really does add an extra layer of flavor that I really like.
