Creamy Avocado Dip

Manly Kitchen Creamy Avocado DipThis is Day Two of Dip Week here at Manly Kitchen. So far, I’ve posted my Eleven Layer Mexican Dip and Smooth and Creamy Bean Dip. I’m going to post a new salsa or dip recipe every day this week, all the way through Saturday. Then on Sunday, I’ll post a baked, layered dip to finish off the week with a bang. Of course, you can add these, and this one, and maybe some Manly Guacamole, then get your friends on the phone and have them each bring a bag of chips for the game.

Today’s dip is so simple, I’m almost embarrassed to call it a recipe. I mean, really, there are two ingredients and one step in making it. But that was actually the point of the exercise when I made six dips for dinner guests a while back. I wanted to see how many super-easy dips I could do in a short amount of time. It really was an experiment with my dinner guests serving as uninformed human lab rats. They had NO idea that I’d never done half of them before. And that was half the fun for me: to see if my new ideas stood up next to the ones I’ve perfected over time.

Like I said, two ingredients and one step. Well, two, if you count cutting the avocados. So let’s just cut to the chase and get to it, shall we?

Avocados
Sour Cream

Instructions:

Cut avocados in half, top to bottom, and separate halves. Stick your knife (or a fork) into the seed and twist it to remove.

Use a spoon to scoop the flesh into a blender.

Add sour cream. Put the top on the blender and push Massacre. If your blender doesn’t have that setting, use the highest one it has. Blend until totally smooth with no lumps.

Scrape everything – and I do mean everything – into a bowl and serve with warm tortilla chips.

Avocados vary in size and that’s going to determine how much sour cream you will need. I’ve found that a 50/50 blend is perfect.

You can also use Avocado Cream as a topping for enchiladas or street tacos. It also makes a nice dressing for a tomato and onion salad to go with any Mexican meal.

By the way, this one counts as Manly Health Food because it’s green. You can either collect ten Manly Points, or negate the fat calories consumed during one-half day of football.*
